Denise Stewart-Sanabria: "I like to juxtapose design and culinary creations from different cultures, countries, and centuries to see how they interact and project desire. Versailles was a cultural extreme in so many things, from fashion to bakery inventions. There has been a huge resurgence in the popularity of Macarons, which go back centuries in France. I've combined them with American Malted Egg candy, in a pond of pastry glaze. They work. I figure they would have been popular in the Court of Versaille. (I wonder if Moonpies and Zingers would have been, also) The flowers are like the confections: also highly hybridized for color and complexity... When you look at the interior design and creations from different times in history, you are reading the culture, dreams, and preoccupation of that time. It’s my form of anthropological research."
